The best french toast I've ever had. It's fluffy, not too sweet, and makes the perfect Sunday breakfast.
This brioche french toast is the biggest crowd pleaser, so feel free to double or triple the recipe! It also lasts great in the fridge, and you can just pop one in the toaster for a quick breakfast.
The vanilla bean paste adds the gorgeous specks of vanilla throughout, and adds so much flavor. If you have it on hand, I would highly recommend using it! I have also linked our favorite brand in the ingredient list below if you want to try it for next time.
Servings: 2, 4 slices of french toast
Ingredients:
4 eggs
1 cup milk (any kind will do, we use almond)
1 tsp vanilla bean paste (vanilla extract also works great)
1 Tbsp coconut sugar (any sugar works here)
4 slices of brioche bread
A pinch of salt
A pinch of cinnamon
1 Tbsp butter
Maple syrup, to serve
Directions:
In a large bowl or baking pan, add in the 4 eggs, milk, vanilla bean paste, coconut sugar, salt, and cinnamon. Whisk until well-combined.
Slice your brioche bread about 1/4-1/2 inch thick. You can totally adjust the thickness based on your french toast preferences.
Soak 2 slices of bread in your egg mixture for 2 minutes, then flip and soak for another 2 minutes.
Heat a cast iron skillet on medium-high. Add in a small block of butter and melt until the bottom of the pan is coated.
Once hot, carefully place the 2 slices on the skillet. After 1-2 minutes, check the bottom and flip when it reaches a perfect golden brown. Do the same with the other side.
Repeat the process for your other 2 slices of brioche.
Place a slab of butter on top and pour generously with real maple syrup. Bonus if you can heat your maple syrup beforehand - it makes the biggest difference! Another great topping option is berries and whipped cream.
