This is the perfect use for those overripe bananas sitting on your counter.
This banana bread is the biggest crowd pleaser, and never lasts more than a day. Feel free to add in chocolate chips or walnuts as well.
Servings: 1 loaf
Ingredients:
4 overripe bananas
1 1/2 cups all purpose flour (I love Jovial brand)
3/4 cups coconut sugar
1/2 cup olive oil or coconut oil
1 egg
1 tsp vanilla bean paste or vanilla extract
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
Directions:
Preheat the oven to 350F.
In a large bowl, mash 4 bananas. Add in the coconut sugar and beat well.
Add in 1 egg and your oil of choice, and whisk until combined.
In a separate bowl, mix the flour, baking soda, cinnamon, and salt.
Add your dry ingredients into the wet and mix until combined. Mix in optional add-ins like chocolate chips or walnuts now as well.
Pour the batter into a parchment lined loaf pan.
Bake at 350F for 50-60 minutes or until a toothpick comes out clean.
Store in an airtight container for up to a week.
